This is a reworked recipe I did for the holidays

2 cups flour
2 cups sugar
1/4 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons ground Cinnamon
3 eggs
1 1/4 cups vegetable oil
1 teaspoon vanilla extract
1 cup well drained crushed pineapple
1 jar maraschino Cherries Drained & Chopped
1 cup shredded coconut



In a mixing bowl, combine dry ingredients. Add eggs,oil, Cherries, and vanilla~ beat until combined. Stir in pineapple and coconut.
Pour into a greased 13x 9 pan.
Bake at 350* for 50-60 minutes or until cakes test done
Cool Before Frosting


CREAM CHEESE FROSTING
1 pack of cream cheese
3 cups powdered sugar
6 tablespoons butter
1 teaspoon vanilla

1/2 cup chopped pecans to sprinkle on top of
the frosting if desired.

Combine frosting ingredients in a small bowl;mix until well blended.
frost cooled cake. sprinkle with remaining nuts.
store in refrigerator.

This is a recipe we love given to me by Our Aunt Lynda Hendrickson


5 whole chicken breast (cooked and shredded)
(you can also just use a couple of large cans of chicken)

2 bunches of Fresh Spinach
1 head lettuce
1 large can chinese noodles
6-7 green onions
1 small package of sliced almonds
1/2 cup sesame seeds (roasted)
1 can water chestnuts

(overnight marinade the water chestnuts and cooked chicken breast in 1/2 of the salad dressing)

SALAD DRESSING
1/2 cup of apple cider vinegar
1 teaspoon Accent Seasoning
3/4 teaspoon Black Pepper
1/2 cup sugar
3 teaspoons salt
combine all these ingredients over low heat to dissolve
then let cool
and add to
1 cup vegetable or canola oil

Toss all ingredients together when ready to serve!
This is a favorite recipe given to me by my sister Alecia,
it was John's Grandmother's Pumpkin Cranberry Recipe.
It Turns out super moist & wonderful flavor

2 slightly beaten eggs
2 cups sugar
1/2 cup oil
1 cup pumpkin

mix all above ingredients together

In Another bowl,

2 1/4 cups flour
1 Tablespoon Pumkin Pie Spice
1 teaspoon Baking Soda
1/2 teaspoon salt

Fold Dry ingredients and wet together

Then add
1 cup chopped cranberries
fold into mixture

then pour into 2 greased loaf pans
bake at 350degrees for 1 hour

We Love Olive Garden Stuffed Mushrooms and this is a recipe I have used
not the same but similar and tastes good

1 Package whole mushrooms
wash well & pat dry then
(pull out the stems & Chop up the stems to be used for the filling)

1 stick butter (1/2 cup)
1/4 cup chopped onion
3-4 slices white bread, torn into tiny pieces like bread crumbs
1 cup shredded mozzarella cheese

heat the oven the 350 degrees



in a skillet saute the chopped onion and chopped mushrooms in the stick of butter,
once cooked, stir in the bread crumbs, then add a third of the mozzarella cheese to this mixture and just a dash of garlic salt or garlic powder


melt in a microwave safe dish
1/2 stick of butter (1/4 cup)
and pour into the bottom of a 9x13 baking dish
place the mushrooms in the pan and stuff each one with about a teaspoon or tablespoon of the stuffing mixture


then place in the oven for 12 minutes
top with the remaining shredded mozzarella cheese
and bake 10 to 12 more minutes

let set for a few minutes and serve

I love this recipe for sugar cookies they turn out nice & Soft YUM
you can decorate or eat plain good yummy!

1 1/2 cups butter Softened
2 cups sugar
4 eggs
1 teaspoon vanilla
5 cups flour
2 teaspoons baking powder
1 teaspoon salt


Cream together the butter & sugar, then add eggs and vanilla, mix in the flour baking soda and salt, cover & chill in the refrigerator at least one hour or can chill over night.

roll out the dough on floured surface in 1/4 to 1/2 inch thickness and cut into shapes and bake!

bake at 350 degrees for 8 to 10 minutes
Fantasy Fudge

3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk
1 12-oz. package semi-sweet chocolate chips
1 7-oz. jar Kraft Marshmallow creme
1 cup chopped pecans
1 teaspoon vanilla extract

Microwave method:
This is my preferred method & always turns out great!
Microwave margarine in 4-quart microwave-safe bowl on HIGH (100%)
for 1 minute or until melted.

Add sugar and milk & mix well.

Microwave on HIGH 5 minutes or until mixture begins to boil, stirring after 3 minutes. Mix well; scrape bowl. Continue microwaving on HIGH 5-1/2 minutes;
stir after 3 minutes.
Stir in chips until melted.


If you wish to cook on the stove here is the directions
Traditional method:
Combine sugar, margarine and milk in heavy 2-1/2 quart saucepan; bring to full rolling bail, stirring constantly. Continue boiling 5 minutes over medium heat, stirring. Remove from heat, stir in chocolate till melted. Add marshmallow creme, nuts & vanilla beat till blended. Pour into greased 13 x 9-inch baking pan. Let cool and cut into 1-inch squares.

Add remaining ingredients & mix well.
Pour into a buttered 13 x 9-inch baking pan. Cool at room temperature
cut into squares. Makes approx 3 pounds.

This is one of my favorite SUPER EASY to make cookies!

1/2 cup milk
1/4 cup butter ( 1/2 of butter stick)
2 cups Sugar
1/2 cup cocoa
1 tsp vanilla
1/2 cup peanut butter
2 1/2 cup oatmeal

Mix Sugar, Butter, Cocoa and Milk together in a saucepan
over medium heat, bring to a boil & Boil for 1 minute
Remove from heat & stir in the other ingredients
drop teaspoons full onto silicone wonder mat or wax paper
and let cool
makes approximately 5 dozen cookies














Homemade Cinnamon Rolls!
*love this recipe*

4 cups Warm Water
2 Tablespoons Crisco or Oil
2 packets of dry yeast
1/2 teaspoon salt
1 cup sugar
9 cups flour

Mix water, oil, yeast salt & sugar then begin adding your flour 1 cup at a time, you may need a little additional if the texture is still too sticky after mixing that all in

The Tupperware thatsa bowl works great for mixing up breads
You can knead on a pastry sheet & cover in bowl and set to let rise
after 1 hour or so check & when it has risen to the top of the container press it back down


To make cinnamon rolls

divide the dough into half after it has risen & repeat this process twice

then roll out onto floured surface

spread with butter and sprinkle sugar & cinnamon
roll up and then cut into 1inch to 1 1/2 inch sections and place in a greased baking dish
Cover with towel &
let rise again &
then bake at 350degrees for 20 to 25 minutes
& then

top with this glaze frosting

2 cups powdered sugar
1 tsp vanilla
1/3 cup milk
I was able to visit Paula Deen's Restaurant - the Lady & Sons
and taste this scrumptious cake

here is the recipe so quick and easy to make too!
YUM!

Gooey Butter Cake

Cake (bottom Layer)
1 -box Yellow Cake Mix
1 Egg
1 Stick of butter (Melted)

Preheat the Oven the 350 degrees

Combine the Cake Mix, egg and butter until well mixed
pat the mixture into the bottom of a lightly greased 13x9 inch pan


Filling
1 8oz pack of Cream Cheese (softened)
2 eggs
1 teaspoon vanilla
1 stick butter (melted)
1 16oz box of powdered sugar (or 3 cups)


In a large bowl, beat the cream cheese until smooth, add the eggs, vanilla and butter and beat together. Next add the powdered sugar and mix well. Spread over the cake batter layer and bake for 40 to 50 minutes,(should look golden)
Make sure not to overbake since the center should be a little gooey

I like this best once it has cooled down more like a cookie bar type treat!

this is for a peach version, but I have made it with Cherry pie filling and it turns out scrumptious also!!!!
and its SO EASY TO MAKE


Ingredients

1 stick of butter
1 cup sugar
1 cup flour
1 1/2 teaspoon baking powder
3/4 cup milk

1 large can of peaches (29oz)
1 cup sugar
1 teaspoon cinnamon


put stick of butter in a 13x9x2 baking dish.
Put in the oven until butter is melted......
In a medium mixing bowl mix 1 cup sugar, flour, baking powder and milk. mix well then pour over the melted butter.
then Pour the peaches and juice on top of the batter,
sprinkle the peaches with the other cup of sugar and the 1tsp cinnamon and bake at 350 degrees for 1 hour.

let cool and crust will be lightly crispy my kids really love this and so does my husband.....I like baking this while I am preparing dinner and then by time you want a later dessert its cooled off just right (still warm but not all the way cool!! )



If you decide to substitute cherry pie filling for the peaches,
I just leave out the cinnamon and it turns out equally as good as the peach version!!!
3 pkg strawberry Kool Aid mix
3 cups sugar
3 quarts water (12 cups)
46oz can Pineapple Juice
Mix these ingredients together & freeze


take out of freezer 1 hour before serving to start thawing
then when ready to serve
put in punch bowl & add
1 quart gingerale

if you want to add this really adds some texture & fruitiness
2 mashed bananas and chopped strawberries



Anytime we would have leftover pot roast this was always a favorite to make another dish,
I always wanted to help out in the kitchen and
even If I couldn't I observed as much as I could!!

here is how to make homeade vegetable soup or stew like Grandma and Mom did!




(you can also just cook up some of the stew meat covered with water for a few hours (with onion soup mix) til tender if you don't have leftovers to work with )

These are the ingredients I like to use in my soup but you can add or takeaway depending on the vegetables you like best.

Roast or Stew Meat
Chopped Carrots
Chopped Potatoes
1 pkg of small shell macaroni
1 bag frozen corn
1 bag frozen chopped okra (no batter on it) or whole baby okra
1 large can diced tomatos
2 large cans Tomato Sauce
salt and pepper to taste


Take chunks of your leftover roast beef and toss in a pan add water and bring to a boil, if you have extra stock from the roast use that too and just fill a big dutch oven about halfway full of water and boil away,

Chop up raw carrots and add to the boiling pot stir occasionally
to let them get a head start on the other since they take longer to cook
cook about 15 minutes then

Peel Potatoes and cut into chunks and add to the boiling
mixture, add the can of diced tomatos and add the frozen corn and okra
make sure pot is pretty full of liquid maybe 3/4 full in your pan.

Boil about 10 minutes then add the package of shell macaroni,
stir occasionally
cook about 6 to 8 minutes until pasta is tender

then when that is done add the 2 large cans of tomato sauce
turn heat to low and simmer for 5 minutes and
and let stand until serving

add salt and pepper to taste.

All of our children love this and its a great to get them to eat their vegetables
Many times I would help my grandma make a huge Tupperware bowl of Potato salad to take to church dinners or family dinners, she made THE BEST Potato salad and everyone would rave and clean out her dish!

Here is what we did
you will need
approx 5lb potatos
miracle whip or Mayo
dill pickles
sweet yellow onion
mustard
pickle juice
salt
pepper

Use about 5lbs of potatos
peel potatos and cut up in chunks and place in a big pan
just cover with water and bring to a boil, then boil until tender and ready to mash

Drain and mash, add salt and pepper to taste

let cool a little then add
1 1/2 cups miracle whip or mayo
1 tablespoon of mustard
1/3 to 1/2 cup pickle juice from the jar of dill pickles
1 cup finely chopped onion
1 1/2 cup finely chopped pickles

Mix well and chill to serve
you can also add boiled chopped up eggs if you desire
and on the mayo you can add more or less depending on your taste

the one problem with cooking from scratch it is so hard to duplicate
recipes, since we tend to add a little of this or that without measuring
I hope if you try it you enjoy!
This is one of my favorites for holiday meals, with barbeque beef sandwiches,
fried chicken etc. Always get many raves on this recipe and like my grandma always said the secret to our tasty potato salad is the pickle juice :)
This is a super easy recipe that the whole family enjoys, even good with a little a'la mode too!
this was one of my mother in laws favorite cobblers I would make for her.
I love how quick and easy it is and the taste of course is YUMMY YUMMY!
and it is fascinating how the crust raises to the top & the Sugary crust!

1 stick butter
1 large can sliced peaches (sometimes if I want more peaches I will add an extra can that is drained)
1/2 cup sugar
1 tsp cinnamon

BATTER:
1 cup flour
1 cup sugar
2 teaspoons baking powder
1 cup milk

Heat oven to 350degrees
in 9x13 pan melt stick of butter in the pan

then mix your batter ingredients well, pour in the pan on top of the melted butter
then open your peaches and pour over the batter mixture into the baking pan
sprinkle the top of the peaches with 1/2 cup of sugar and 1 tsp cinnamon

place in the oven and bake for 1 hour

then serve after baking or cooled off, its good either way!


***You can also substitue with other fruits,
I have used this recipe with cherry pie filling and left the cinnamon out and tasted wonderful too!
This is a recipe passed down from My Grandmother, she was always a hit at the church potlucks and family dinners and remember my Mom made this on many Sunday's at home becuase of the simple process and the tasty results! Great tasting ~ people were always anxiously awaiting her Sunday Dinners!
I remember sneaking a taste early in the morning if she was preparing this before we were off to church before she finished layering the ingredients and Yum Yum!


Ingredients

2 lbs ground beef with
1 small chopped onion (brown together in LARGE PAN and drain then add other ingredients)

1 can cream of mushroom soup
1 can cream of chicken soup
1 can diced green chilis (if you don't have this you can add a can of rotel or 1 cup Salsa)
1 small can tomato sauce
2 cups cooked rice (instant and cooked)

Mix together and heat thoroughly.

Then add a small layer in a 9x13 baking pan
then add Flour tortillas to cover the space or crushed tortilla chips

repeat layering one or two more times and then
finish up with the meat mixture on top


Cover with Shredded Cheddar or Colby Jack Cheese and
bake in the oven
at 350degrees for 15 minutes or until cheese is melted.
This is a recipe I created to taste like my Grandma's homeade bread recipe, after trying alot of different bread machine recipes ~ I wasn't happy with the taste so played around a bit and created this one of my own and tastes like Grandma and Mom's Homeade Bread!
This is a sweet white bread.

You can let it bake or stop after it rises and make it into rolls and bake in the oven if you want to do rolls.

This is a 1 1/2lb loaf

1 cup warm water
1 Tablespoon Oil
3 cups flour
1/2 cup sugar
1 teaspoon salt
2 teaspoons or 1 packet of yeast

add to machine in order of ingredients

you can also replace 1/2 to 1 cup flour with wheat flour to vary the recipe

This is one of my favorite Holiday candies my Mom makes!
I remember her making batch after batch to give away as Christmas gifts, my Uncle Elmo loves when it's holiday time and I make this, its such a flaky crunchy recipe...not too hard on the teeth!
Perfectly flaky and yum!

3 cups sugar
1 cup corn syrup
1/2 cup water
3 (heaping) cups of Raw Peanuts
3 Tablespoons of Butter
1 teaspoon salt
2 teaspoons soda (heaping)

Boil sugar, syrup, and water until a thread spins.
Add Peanuts and stir continuously and cook until a gold color
Take off stove and add butter, salt, and soda. Pour on to buttered board
let cool and break apart.
This is a Really Tasty Easy to Make Meatloaf Everyone Loves it when they try it,

2 lb ground beef
1 cup milk
2 eggs
3/4 cup bread crumbs
3/4 cup cracker crumbs
3/4 cup chopped onions
1/2 cup chopped green peppers
1/2 cup grated carrots (*I like to substitute with grated potatoes)
1 Teaspoon worcestershire Sauce
1/2 teaspoon Pepper
1 Tablespoon Salt
1/2 cup Ketchup

Instructions-Mix ingredients well and place in baking dish formed into loaf, bake at 325 degrees for 1 hour, remove from oven and drain grease. Cover with the sauce mix below and bake for 10 more minutes

SAUCE
1 cup Ketchup
1/2 cup Brown sugar
1 Tablespoon Dry Mustard
This is a tasty Gooey Treat!
You will need a German Chocolate-or other chocolate Cake Mix,
(mix and bake as directed)
1 can sweetened condensed milk
1 caramel ice cream topping bottle
1 container Cool Whip
2 chopped up heath bars or you can buy the heath bar chips now too

bake the cake as directed,
when it comes out of the oven ~Poke holes in the top and cover with the can of sweetened condensed milk...then add the container of caramel ice cream topping,
let set until it cools and then top with the container of cool whip and then sprinkle with the heath bar chips across the top
chill and serve!
What a cool a refreshing treat!
These are super easy to make and taste really good
no chilling time is required in the refrigerator, these are good to use for
sugar cookies with decoration on top or just plain
our family loves them!


1 cup of butter (softened)
1 1/2 cups SUGAR
1 EGG
1 teaspoon vanilla
2 3/4 cups Flour
1 teaspoon Baking SODA
1/2 teaspoon Baking POWDER

DIRECTIONS:
In a large bowl cream together the butter and sugar, then beat in the egg and vanilla,
gradually add dry ingredients until mixed well,
then dip out and roll into rounded teaspoons of dough balls
bake on ungreased cookie sheet or SILICONE BAKING MAT

they need 8 to 10 minutes baking time they will be a golden color when done
let set for a minute before removing from cookie sheet or mat

preheat your oven to 375 degrees to bake..then bake for about 8 minutes for soft chewy cookies
at 10 minutes for me they tend to be more crispy

enjoy the cookies!! Decorate with sugar sprinkles or we like to decorate them with white icing recipe sometimes, just a light coating adds a bit more sweetness
